Staff Pick Notes

When I lived in France, we'd collect wild thyme from the woods surrounding the vineyard. It was more resinous than the leafy, verdant kind of herb you usually get here, with more concentration and a cooling analgesic quality. This liqueur immediately took me back to drinking that intense thyme steeped in hot water with gobs of honey, the local cold remedy. If you are the type to sip a cordial, this is particularly good on its own. The taste is unabashedly of thyme, of course, but being a flavor so rarely enjoyed on its own, it's kind of surprising just how tasty thyme can be. It's incredibly easy to mix with as well. Applejack, whiskey, and fino sherry immediately come to mind as worthy dance partners though I also agree with the French that thyme is an excellent addition to a toddy.
