Eduardo Torres Acosta, a young winemaker from the Canary Islands, first began working with vines in Tenerife on his father's small parcel. In 2012 Eduardo moved to Sicily, where he apprenticed with Arianna Occhipinti and then later worked at the Passopisciaro winery. He now rents some fine parcels on Mt. Etna and vinifies in a more natural fashion however this vintage is pure, all-around. Eduardo vinifies this wine at Arianna Occhipinti's winery and therefore he cannot designate this as being from Mount Etna legally. The great news is we can.

Look to Etna if you seek reds influenced by volcanic soils. Here you'll find wines that show mouthwatering acidity, graceful minerality, and ominous touches of smoke. Eduardo Torres Acosta, a native of the Canary Islands, moved to Sicily when he gained an internship with none other than Ariana Occhipinti. He was hired as head winemaker at Passopiscario. In 2018, he began to rent a few plots on the slopes of Mt Etna and began bottling under his own label. His Versante Nord red is composed of Nerello grapes grown at 2000 ft elevation. It's a blend of whole cluster and destemmed grapes, fermented and aged in concrete. The wine sings of elegance with silky texture and lovely cherry fruit. A joy to drink on its own or with sliced smoked duck breast.
