Miho Imada is a living god in the world of saké. She is the rare combination of both brewmaster (toji) and owner of the Imada brewery. In 2020, she was named in the BBC’s “100 Women” of the world for her excellence in a male-dominated profession. Yet the publicity has never changed her ambition of creating saké that embodies her prefecture of Hiroshima. Here, granite-influenced soft water necessitates a long fermentation, which results in saké that feels round and smooth on the palate. Imada’s "Moon on the Water" has that mouthfeel, while concentrating a remarkable amount of aromas and flavors. It bursts of opulence, showing Korean pear, melon, fennel, and plenty of umami. A must pour with crabcakes.
