As the story goes Pecorino wines were originally enjoyed by sheepherders (and according to some the sheep themselves) as they moved their sheep throughout Tuscany. The resulting cheese from these sheep we all know as Pecorino makes some of the best classic Roman pasta dishes, and their corresponding wine is the single best pairing. This Pecorino screams with its classic rich character. To me a savory and almost nuttiness makes this wine go so well with the rich and salty 4 Roman pastas, particularly cacio e pepe. However this wine is not too rich, it also has a bright and lively note of fresh cut hay. All of this together makes an amazing year round white wine.

This region lies on Italy’s Adriatic Coast, so much of its cuisine is seafood-based. Marches is best-known for its white wines. Verdicchio produced near the towns of Jesi and Matelica often has gently bitter notes and rich fruit, and is an excellent match for many seafood dishes.
