This exciting new tequila is made by Melly Barajas at her small distillery (NOM 1533) in Valle de Guadalupe in the highlands of Jalisco, Mexico. La Gritona is made according to traditional methods. The team begins with perfectly ripened agave plants and take no shortcuts on their way to great tequila. The harvest is slow cooked in brick ovens and left to naturally ferment with ambient yeasts before being double-distilled in small pot stills. The new spirit is then aged for 8 months in old American oak barrels. The result is complex and brooding with notes of caramelized fruit, ginger, and pepper.

Good things take time. Don't rush a good thing. Taking the time to wait for the Weber Azul agave to be perfectly mature (9-10 yrs) for harvest is a key element and the starting point. Then its slow oven-roasted to delicatly release the sugars for the next step. Melly Cardenas (one of the few female distillers) allows for ambient yeast to dictate flavors in the fermentation process. Reposado (aged 8 months in this case) is the only type of Tequila that's produced here. From reused barrels and reused coke bottle glass to make handblown vessels for the spirit, a waste not want not philosophy is thoughtful. Delicious sipping Tequila is the result and I can't wait to sip more! Straight forward flavors of roasted agave and subtle spice keep my senses engaged. Salud!
