Tasting Notes

This wine was fermented on the skins for 30 days with wild yeast. Distinctively spicy and orange hued, it has aromas more reminiscent of red wine, including cherry and pepper. Despite a month of skin contact, this is not an oxidatively styled orange wine, but rather a white wine with texture and balanced acidity.

The Primorska region is the westernmost pillar of the Slovenian wine triumvirate. Goriska Brda, its most prominent appellation, lies atop an ancient seabed--the same stretch of land that is known as Collio just over the border in Friuli, Italy. At the helm of the Kabaj winery is Jean Michel Morel, a French-born enologist. Morel married into the family and fused his classical training with the rich and unique Slovenian winemaking tradition. The Rebula grapes (Ribolla Gialla in Italian) are hand-harvested, destemmed and fermented with wild yeast in open oak vats. The wine sits on the skins for 30 days, imparting a deep golden orange hue and pleasing, tannic structure. It is a veritable spice box of warm, wild aromas. For all its rugged components, this wine exhibits classical precision and elegance above all else.
