Noella Morantin is insistent on using her own sensibilities when making wine. She would rather be non-classified Vin de France than adhere to the rules of her native Touraine Sauvignon appellation. She is thus able to produce some incredibly soulful natural wines. This gem vinifies Sauvignon Blanc fruit from the Chez Charles vineyard, and uses non-interventionist methods of winemaking. There are no added yeasts, fining, or filtration. The wine is aged in 400 liter neutral oak barrels. The wine appears cloudy and golden in color, has aromas of fresh nectarines, nutmeg, and hay. The texture is fresh and silky. It is teeming with flavors of stone fruit, mineral, and herbs. It’s a no-brainer for Sancerre fans who want to discover natural wines.
