Tasting Notes

Polarity is a unique white wine made from 100% Pinot Noir grapes. The grapes are hand-harvested and then whole-cluster basket pressed immediately after sorting to minimize skin contact. The juice was then barrel fermented, then sur-lie aged and stirred every 3 days.The wine was finally bottled after nine months of barrel aging. You'll find a pale copper rosé color in the glass and red fruits and stone fruit flavors on the palate. Quite rich and lush in texture from the barrel aging. this wine will pair well with duck breast and game bird.

Here's a unique and brilliant expression of an international variety from Heart and Hands in the Finger Lakes. This is a direct-to-press Pinot Noir which for all intents and purposes translates to a rosé wine. Yet a couple of key winemaking decisions for 'Polarity' including barrel fermentation/aging as well as lees stirring renderin a wine notably emphasizing texture and finesse rather than fruit and acidity alone. Regardless, the fruit expression is hardly shy or diminished even at 3 years of age now; think summer fruits like nectarines and plums along with background notes of dew and fresh white mushroom. And everything is held together by a beaming line of acidity. All in all they've more than succeeded here in maintaining the soul of Pinot Noir w/o sacrificing the vibrancy of rosé wine. A superlative effort from this small NY estate!
