High Wire is all about the flavors, heritage and traditions of the South. The revival of this long lost palate takes familiar guises like this four grain bourbon. The grains used are heirlooms sourced from local farms including heirloom white corn, red winter wheat, malted barely and Carolina gold rice bran. The flavors are clearly in the bourbon family but with their own noticeable personality including notes of cherry preserves, smoked hickory, fresh walnuts, clementines and grilled bread. Yup, we like this one.

If you're looking for a small batch bourbon which offers something else here's a good slow sipper. High Wire is a craft distillery in the heart of Charleston, SC. Founded by a husband and wife team with an appreciation for the culinary arts, their spirits are distilled from locally harvested ingredients. The four grain bourbon has a mash bill of white corn, red winter wheat, malted barley and Carolina gold rice. The aroma is like buckwheat pancakes with maple syrup. On the palette notes of roasted walnuts, sponge cake, baking spices. The effect is pleasantly not too sweet allowing the grain character to shine. Cue the Gershwin track. And sit back.
