A Pét-Nat, or Pétillant Naturel, as the wine finished fermentation in bottle and is delightfully sparkling yet dry and fresh with tangy minerals on the finish. This is made from Trebbiano from two separate tries, or pickings, in the vineyard that were 30 days apart.
