Crémant de Limoux, Brut Nature, Dom. de Mouscaillo - NV

A sparkling wine from Limoux based on fruit grown on limestone and clay-based soils in Mouscaillo and Saint Pierre. Hand-harvested and then fermented in 600 liter casks. The second fermentation is started with grape must from the harvest. The wine is left on the lees for 18 months before disgorgement. Mouscaillo is a domaine built out of strong character by the aptly named Pierre and Marie-Claire Fort on an exceptional terroir. The Fort family started their winemaking endeavors in 2004 after befriending Didier Dagueneau.

Sparkling wines are made in every wine region of France. But the most prestigious one overshadows them all by a long shot. While it's unfair to compare anything against the precision of Champagne, there are many other sparklers of distinct character to explore if you are open-minded. Limoux is regarded as the region where the traditional method (second fermentation in the bottle, which creates that wonderful pop of tiny bubbles in the glass) originated, and the technique eventually made its way north. This Crémant de Limoux from Domaine de Mouscaillo is made primarily of Chardonnay and Chenin Blanc with a tiny amount of Pinot Noir to heighten its acidity. It's bottled with no dosage, but it retains juicy flavors of yellow apple and kumquat on the palate. It's a deliciously spritzy, fruity sparkler to enjoy with dinner.
