Staff Pick Notes

This is a delicious extra brut, organic Champagne. It's 100% Chardonnay. Strangely all the grapes are harvested from the 2011 vintage, which technically means this cuvée should be a vintage one. A very limited amount of sulphites are added and chemicals are not used. A lot of fruit flavors are present in this wine: plum, peaches, pear, and baked apples. The mousse and long length add fantastic character. It's a Champagne that can be drunk for celebratory reasons but, as with most high-quality Champagne, it can be paired with food for a wonderful experience: oysters or scallops would be magnificent with it.
