Domaine de L'Oubliée, is Xavier Courant's 7 ha estate in the commune of Saint-Patrice. This Pét-Nat is made from his small parcel of Chenin Blanc planted in clay, flint and limestone soils. All of Xavier's wines are named after films from Bertrand Blier. Les Valseuses, or "the dancers", is a reference to the playful character of the bubbles on the palate.

Chenin is a beautiful grape because of the variety of its manifestations. Combined with bubbles, it can reveal a singular quaffing experience. Xavier Courant gives us this rendition showing a deep golden hue, aromas of honeysuckle, and flavors of beeswax and melon. No sulfur is added, it’s fermented with ambient yeasts, and it's farmed using biodynamic methods. You might find this wine to be gone before you’ve had enough.
