Cañada Distillery Oaxacan Rum

Made from single estate fresh pressed sugar cane juice grown in the high altitudes of Oaxaca, the harvested cane is slow fermented exclusively with wild yeasts and distilled on a custom still fabricated by the Krassel brothers, proprietors of the Cañada distillery. The spirit is distilled to proof and bottled un-diluted at 53% abv. Being an agricole-like style and sugar cane being a grass, we naturally found a healthy measure of herbal and savory flavors. On last tasting we found notes that reminded us of green peppercorn, banana leaf, minerals, tarragon, coconut butter and preserved limes.

Oaxaca is well known for its fabulous cuisine, its vibrant culture, and as the hub of the pre-Columbian Zapotec civilization. It is also famed for producing the majority of Mexico's mezcal, but outstanding rum is made in Oaxaca as well, though it doesn't yet enjoy the high repute it deserves. This bottle ought to help change that. Harvested from organic sugar cane in a cloud forest 4000 feet above sea level a five hour drive North of Oaxaca city, this is most definitely off the grid. The flavor intensity is pronounced and delicious: papaya, lime zest, bamboo, and fresh herbs. Remarkably smooth despite the 54% ABV, it's savory, sweet, herbaceous, and funky all at once, and I can't recommend it enough for fans of agricole-style rum.
