From the biodynamic vineyards of Quentin Bourse, in the Touraine, Loire, comes this revelatory, natural vermouth. Don't let the "Blanc" description fool you into thinking this is sweet or cloying. In fact this drinks more dry than sweet and incredibly vernal with herbs and savoury notes laced throughout and a fine grained acidity. There are countless ways this could be imbibed.

The wines of Quentin Bourse, Le Sot de l'Ange or "the angel's idiot," are some of the rarest and most cultish-ly sought after natural wines coming out of the Loire Valley. While his wines are increasingly hard to find stateside, we've been able to get our hands on something even stranger and rarer: vermouth he makes, with meticulously sourced herbs and botanicals, from some of his best wines. I had the privilege of trying both before they hit the shelves and was immediately smitten with the blanc--if you are looking for an aperitif, drink this on its own or with a splash of soda. It's my favorite we have in right now. Drier than you would expect from the "blanc" designation, it is very much a natural wine at its heart. Savory, herbal, and a little wild, it walks the tightrope of being interesting and complex but outrageously refreshing.
