A truly one-of-a-kind Rye that was created from 3,4 & 6 year old whiskies distilled from two mashbills and aged in a solera of ex-Rum casks developed and built by the blending team at Doc. At first notes of chamomile, spearmint, yellow peach and red tea stand out. With a little time additional layers of pickled strawberries, ripe persimmon, cacao nibs and green tobacco come forward. Truly unique.

The real magic in the production of Sherry happens in what's called the solera system - an innovative method of fractional blending in which younger wine is blended with older wine to ensure a consistent product from year to year. The younger wine serves to refresh and awaken the older wine, while the older wine enhances the depth and quality of the younger wine.
