This Muscadet is fruit-forward in style, with aromas of lemon and green apples. Bone dry, with a finely chiseled edge, this single-vineyard wine is named for the metamorphic, green-hued stone scattered throughout the vineyard. Finishing with green apple and lime-zest acidity, this is a fine partner to oysters, clams, and scallops in a bright citrus sauce.

The coolest (temperature-wise) of the Loire Valley appellations, this region is most famous for its bracingly dry, seafood-friendly whites. Made from the Melon de Bourgogne grape (virtually unheard of in the rest of the world), these refreshing wines are idyllic partners for oysters or mussels.
