Hervé Souhaut makes wine just west of the St.-Joseph sub-region of the northern Rhône Valley. With this wine, he strives at every turn to preserve the natural fruit character of the Syrah grape. Dark berry fruits on the palate lead to violets and eucalyptus on the finish. This is a fresh, unadulterated, profoundly complex red wine.

Great Syrah is becoming more difficult to find as the world experiences rising temperatures. I’ve tasted many whose trademark smoky, meaty flavors have been replaced by burnt ends. Hervé Souhaut to the rescue! This former biologist (wine is science btw) uses slow, partially carbonic fermentation which preserves the character of the Syrah grape and reveals the great terroir of Souhaut’s estate. This is a wine that drinks beautifully in its youth but will improve with age. The wine is generously aromatic with scents of purple flowers, hibiscus, earth, and stewed black cherries. The palate shows soft, cottony tannins, a salty undertone, black pepper, and plums. It finishes long with a hint of black tea. Lovely with Shanghai braised pork.
