Looking for a great alternative to Chablis? Assyrtiko is a Greek varietal grown primarily on the windswept island of Santorini. The grape offers lean minerality and high acidity, but is not quite as steely or austere as Chablis can be. This particular bottling is rounded out by 10% of two other Greek natives - Athiri and Aidani. These grapes add just a touch of additional fruit and floral softness on the palate. The wine compliments all manner of Mediterranean dishes from taramasalata, to grilled fish or Kebabs. It also pairs well with warm summer evenings in general.

Athiri

A Greek white grape with a lemony character, often blended with other grapes such as the Assyrtiko.

Assyrtiko

Pronounced "a SEER tee ko". This white varietal is native to Santorini and the other Aegean Islands. Used to make crisp dry wines similar in style to dry Riesling, it is often blended with other varietals - both indigenous and international - such as Sauvignon Blanc. This grape is also used to make the popular Greek dessert wine, Vinsanto.

Aidani

A white grape variety that enjoys particular success on the Greek island of Santorini, Aidani also grows in the Cyclades, Naxos, and Paros. Yielding wines of moderate alcohol content and acidity, the grape offers a richly floral aroma, making it an ideal blending partner for higher-alcohol/higher-acidity grapes, such as Assyrtiko.
