Made from 100% percent Aidani. The late winemaker Haridimos Hatzidakis was known as a cult figure in the world of Santorini wines. His family is still running the winery and upholding his traditions. They farm organically and vinify without added yeasts and a minimum addition of sulfur, often in old barrels. Packed with flavor and character, this full-bodied white wine is best matched with red snapper or cornish hen.
A white grape variety that enjoys particular success on the Greek island of Santorini, Aidani also grows in the Cyclades, Naxos, and Paros. Yielding wines of moderate alcohol content and acidity, the grape offers a richly floral aroma, making it an ideal blending partner for higher-alcohol/higher-acidity grapes, such as Assyrtiko.
