Only a few times a year does a simple taste of a wine provide me with a memorable experience. Just the other day, Billaud Salmon’s simple Chablis was part of a store tasting here at Astor. I got to get a swirl after the tasting concluded and I must admit, I haven’t had a mouthful of anything recently that set off my imagination in this way. The first whiff felt as if a window was opened to gusts of aromas: hay, citrus, and warm bread. Then the palate danced with vibrant energy. Flavors of lemon curd, toasted almonds, and pineapple happily swirled in my mouth. Serve with tuna tartare or Brie de Meaux.
