Here is a delicious sparkler from the lovely (and ever sheltered from the dangers of spoofy modern winemaking) Jura mountains. From a top producer in Étoile, the wine ressembles a Champagne in that it is yeasty and full of mineral flavors and lip-smacking acidity.

Everyone loves Champagne, but most of the time I can't swing $50 for a bottle for a weeknight dram. This Crémant de Jura, however, can be purchased without guilt whether you have an occasion to celebrate or not. It's weighty, yeasty, savory and totally dry. Winemaker Nicole Deriaux is the third generation to take the reins at this historic estate located in the village of L’Etoile, which is named for the many starfish shaped fossils found in the region. She works naturally with the land and with respect for the traditional rustic style of the Jura. Grapes are harvested by hand and the wine is made in the cellar underneath the family home. She produces just a small amount of sparkling each year from her young vines.
