Shaw and Smith's overarching goal is to prove that Australia can grow grapes that are typically grown in cooler climates. This Chardonnay is impressive in every sense. Full of white floral fruits, it is reminiscent of a southern French white Burgundy, made with hand-picked fruit aged in neutral French oak.

Staff Pick Notes

You’ve probably noticed that there is a lot to choose from at Astor, so I rarely revisit one wine. Not this time, not this wine. I keep going back and it’s become my go-to Chardonnay. It’s versatile: a backyard sipper now that the weather is nice and a formidable food wine that seems to pair well with just about anything I can throw at it (our last date involved parmesan-crusted chicken and potato croquettes). Kaffir lime, white flowers, and paraffin on the nose lead to a generous palate of lemon cake and sea spray with just the right amount of oak. Managing vineyards sustainably, valuing soil and vine health and low yields are central to the Shaw + Smith approach. Grapes are hand-picked, whole bunch chilled and pressed, and matured on lees in French oak barriques and puncheons.

Pairing Advice

This white is made in a richer style that mimics the great wines of the Côte de Beaune, such as Meursault or Montrachet. The classic pairing here is roast chicken, especially with some naturally sweet roast vegetables on the side (onions, carrots, parsnips). This wine also pairs nicely with fish like trout, salmon, or even fried catfish - anything with a little extra richness.

The high altitude and steep topography of the region exert cooling and humidifying effects, which, along with the highest rainfall in South Australia, contribute to a climate very conducive to leaner, more mineral-driven styles of wine.
