More mineral driven flavors and aromas due to sparing use of oak. The winery was transformed in the 1980s when this multi-generational family-run winery was modernized by Bernard Billaud. Use of stainless steel, where heavy open wooden vats were once used, allowed the minerality of Chardonnay and the terroir of La Fourchaume to dominate. La Fourchaume is considered one of the best 1er Crus, one of the oldest original parcels before the expansion in 1978. The terroir here emphasizes minerality, with a full, concentrated palate.
