Montbourgeau harvests their Savagnin late to push for a higher degree of alcohol.The wines rest in 30 hl foudre for six months, then for the true aging, pass into 230 L barrels, where they obtain a fine veil of yeast. After seven years under veil, the now-yellow wines are bottled. Due their oxidized nature, these justifiably unique wines are ready to drink immediately, but will last 50-100 years in bottle. Always rounded, dry and complex.
