A pristine Blanc de Noirs from a tiny parcel of 34 year old vines called "Les Ursules." This is Bouchard's own parcel, whereas the Infloresence is that of his father's. His attention to detail is obvious, as this wine is well executed in every aspect. Multiple layers unfold with notes of green apple, ripe pear, jasmine and minerals. Ethereal and uplifting flavors leading to a lengthy, complex finish. Cédric hand-harvests, vinifies the first press juice only, and crushes the grapes by foot. Élévage occurs entirely in stainless steel with indigenous yeasts. The wine is unfined, unfiltered, and aged for 28 months. As with all his wines, Les Ursules is non-dosé.
