The perfect festive sparkler at a very nice price. Val de Mar is Patrick Piuze's(of Chablis fame) negociant label and the Pinot Noir grapes for this cuvee are sourced from the village of Tonnerre about 10 miles northeast of Chablis. Hand harvested and naturally fermented, Piuze makes this with the same care he makes his terrior driven Chablis. A short maceration on the skins gives this wine a beautiful light pink hue( the bottle makes it look darker than it is). 9 months of lees aging imparts texture and complexity while the stainless steel fermentation retains the natural vibrancy and crispness of the Pinot Noir grape. Light and fresh enough to drink on its own at the start of the party and fun and crisp enough to keep that party going into the wee hours.
