Benoît Velut is not your average young winemaker. Rather than immediately taking over his father's estate, he chose to travel the world, only to come back home with a real desire to take on Champagne head-on. This is his Blanc de Blancs bottling which is all Chardonnay that shows vibrant focus with white flowers, citrus, mineral, and a fruity accessibility. Impressive, all-around and a step up from his basic blended Brut bottling.

Nothing is more luxurious then popping a bottle of champagne to watch the dog show. Trust me, I know this from experience. Notes of misty salty tides hanging lightly in the air. powdered granite and lime leaves. The fruit notes are subtle but give a depth and complexity to this wine, lemon curd, tangerine and asian pear. This blanc de blanc is elegant and thought provoking like an Afghan or perhaps an Irish Setter. Pair with bagels with lox, dill, capers and LOTS of salmon roe. Best in breed... more like best in show. WOOF
