When young, Carbonnieux's white wine beguiles with fresh charm, as the Sauvignon Blanc dominates initially. Pure limes and citrus give way to floral intensity. As this wine matures, the rounded, honeyed nature takes over; judicious use of oak and the wine's Sémillon character soften into notes of dried, preserved apricots. 2007, a cooler vintage was useful for the whites of Bordeaux. A variety of foods and cuisines pair well with this supple wine: buttery fish, roasted poultry or vegetable gratins are a few fine suggestions.
