The Republic of Georgia borders the Black Sea, Turkey, Armenia, Azerbaijan, and Russia. Widely considered the origin place of today's vinicultural species, Transcaucasia boasts a very long history of wine making. Today the wines produced there are as appealing as they must have been in ancient times. Saperavi is the noblest grape of the region, and a beautifully deep red wine results from its dark skin and as well from the grape's rare purple flesh. Moving past its gorgeous hue I can smell a deep concentration of fruit. The palate has plenty of tannin and acid, enough to hold it safely in bottle for years. A sharp mineral and slightly animal edge characterize the finish. This wine was fermented in qvevri (said KWEV-REE), a type of earthenware vessel used in Georgian wine making for millennia.
