If you’ve read any of my Staff Picks in the Champagne section you’ll see I have a fondness for the stuff. Let me tell you, there may be nothing quite as magical as well-aged champagne. This library release from Drappier shows how champagne can completely transform itself. An effusive aroma of dried mushrooms and rich sauces: soy sauce, hoisin sauce, and plum sauce. The bubbles burst on your tongue with briny minerals, smoked salt, and poached pears. Pour this on a clear night when you can look out at the stars and marvel at life’s miracles.
