Tasting Notes

Bright tart cider blended with elderberries. Expect it to taste like a pet-nat red. Deeper than a rose. Source: Fishkill Farms apples mixed with elderberry that were foraged from the Hollow and hog fields up at Brett and Sara’s Majestic Farm.

Aaron Burr cidery, run by husband and wife team Andy Brennan and Polly Giragosian, has been written up in the NY Times, the Wall Street Journal, Wine Enthusiast, The Feiring Line. They've even gone on CBS. But they aren't a big producer, or easy to find. The home orchard is 5 acres and production is ~30 barrels a year, with no plan to ever expand. I first tried the this elderberry-apple cider at a Raw Wine fair, fell in love, and was heartbroken that it had already sold and we couldn't get it for the store. But they handle every step of production from harvest to ferment to bottling alone, and will never, ever do anything to compromise the quality of their cider. The fruit for this bottle is wild grown and entirely foraged, bottled without SO2 or filtration. It drinks like a light red, with a light sparkle, mind-blowingly good.
