Rosé Cava made from the Trepat grape in Penedès, Spain. Cava is made in the same way as Champagne, with the second fermentation in the bottle. The aging requirements are not as strict, though. For the Castell d'Or, it is just 12 months, but with that aging you do get a complexity that you would not expect in this price range. Cool and crisp, with berry fruit and a clean dry finish, this is the perfect aperitif, but it could transition into a meal's first courses easily.
