Ulysse-Collin Blanc de Blancs "Les Pierrières" Extra Brut - NV

Les Pierrières is a 1.2 ha monopole vineyard in the village of Vert-Toulon. The vines are 40 years old and planted in chalky soils mixed with a black flint. The fruit is hand-harvested, the clusters destemmed. The wine fermented spontaneously in used Burgundy barrels and then aged in bottle sur lie for 4 years before disgorgement. Pair with a bouillabaisse.
