Larb: a fun word to say and an even more fun dish to eat. I like mine with ground Long Island duck from Miloski’s in Calverton, heavy on the fish sauce and Thai bird chilies. Rippingly spicy and salty. For that, we’re going to need a wine like this: a wonderfully structured semi-dry Riesling with a delightful sweetness that plays off of spicy food with a crisp acidity that cleanses the palate that’s equally satisfying just by itself right out of the fridge (with optional lashing of goat cheese, of course). With stone fruits, apple, hints of strawberry syrup and exceptional freshness, it’s the kind of wine you need one or more in your fridge at all times for spontaneous Larbing, or just a friendly reminder that the Massoud family have been making world-class wines of incredible quality at Paumanok on Long Island since 1983.
