A taste of French Catalonia! Banyuls is a French AOC for fortified apéritif or dessert wine made from old vines cultivated on terraced slopes of the Catalan Pyrenees in the Roussillon county of France, bordering the Empordà wine region in Catalonia in Spain. Made from old-vine Grenache with a lick of Carignan and fortified by mutage to 16.5 percent, this wine is wonderfully fruity, with cassis and blueberry in the ascendant. And I have more goods news for you: This wine begs for chocolate. Ideally soft, fudgy chocolate truffles. Banyuls provides a rich, silky backdrop and highlights the fruity notes in the chocolate without ever becoming cloying. To improve upon this pairing further, add a fluffy cow's milk blue cheese. For a power chord effect, pile the cheese on top of the truffle and follow quickly with wine.
