Tasting Notes

Thomas Pico, the young, passionate winemaker of Pattes Loup (meaning wolf's paws), studied under Alice and Olivier de Moor. His wines are hard to come by and we're always excited to get our hands on a bottle. His Chablis AC, from 55+ year old vines, is fermented in about 30-40% in concrete egg-shaped fermenters with the balance in stainless steel.
