A mouthwatering white wine, unoaked and hand harvested by this family-run domaine that has been around since the 17th century. Guy Baudin was a peer of Didier Dagueneau, but chooses not to barrel age this wine, allowing for optimal freshness and immediate drinkability. With tangy green apple notes, this is an especially good match for scallops, classic goat cheese and poultry dishes.

I say I don't like sauvignon blanc, but it's not really true. It's just that I don't like most sauvignon blanc because I know how ethereal the real thing can be. Everything great about sauvignon: an exciting nose of herb, grass, citrus, and the trademark minerality, all of those things rely on the right temperature and environment and growing and when that isn't there... sauvignon blanc is just not what I want.    This wine right here is textbook Pouilly-Fumé and I love it. A nose that isn't too loud but speaks of the land that produced it. Dry, tart, flavorful, and compelling, this wine is best drunk with a verdant mid-day meal under the sun.
