Bordeaux, land of gilded Chateau and commercial wine-making enterprises? For Peybonhomme-Le-Tours, not so much. Founders Catherine and Jean-Luc Hubert take an ancient, farm-driven approach to their wines. They also happen to be delicious! Energies is as far from typical Bordeaux as it gets. In addition to being biodynamic, they chose to age for 12 months in clay amorphae. This ancient vessel transforms the wine's texture into a supple, velvet blanket, coating your palate. A preponderance of Malbec (60%, also unusual) also adds luscious blackberries, cassis and plums, but still very dry. Drink now with a steak frites and enjoy!
