Tasting Notes

This sparkling rosé is made from 90% Cabernet Sauvignon and 10% Petit Manseng. Bled Cabernet Sauvignon grapes from the younger Daumas Gassac vineyards. The “free-run” grape juice is fermented in a closed tank so as to retain all the fermenting gas. Aged 3 to 4 months in closed stainless steel tank.

Mas de Gassac has become one of the most beloved producers of the Languedoc and is often referred to as the Grand Cru of the south. Known for the terroir-driven reds, this sparkling rose is no less a revelation. Made with 70% Cabernet Sauvignon, 30% Mourvèdre, Pinot noir, Sauvignon, Petit Manseng et Muscat, it is made using the juice bled off from the red grapes (aka saignée), then fermented in a sealed tank (Charmat method). Nothing is added to it -- no dosage, no liquor, no gas, no sugar, no yeast. You'll never have another sparkling rose like this. Cabernet's charms are on full display with rich red currant notes, pomegranate, and strawberry. You'll even detect some tannic grip. It's a rich burst of southern France sunshine as only Mas de Gassac can do.
