Wine made from grapes grown organically using natural composting techniques and special preparations of herbal sprays while following the astronomical calendar.
Vincent Couche isn't afraid to experiment. He made this rosé Champagne by using carbonically macerated Pinot Noir, saignée Pinot Noir and macerating Chardonnay and Pinot Noir. Three methods adding to the sheer complexity you'll find. Dry on the palate but exuding a salmon-colored rosé with aromas of cherries, pomegranate and citrus all at once.
In a sea of pink sparkles, Vincent Couche's Extra Brut Rose stands out as a beacon of quality and craft. Couche is a Demeter certified biodynamic producer, a rarity in the mercurial Champagne region. With each of his wines, he strives to express the unique terroirs, and this rose is no exception. Couche employes three different methods for the making of this rose: Carbonic maceration of Pinot Noir grapes, saignee Pinot Noir, (a process in which a portion of red wine juice is 'bled off' after contact with the skin and seeds), and macerated Chardonnay and Pinot Noir. The result is a perfect synergy of flavors and complexity: Bright cherries and ripe strawberries are combined with notes of citrusy-herbal notes of lemongrass. A delicate yet firm structure keeps the wine crisp on the palate, and the low dosage provides clarity on the finish

Terroir,...

Remember that “Non-Vintage” (NV) is not a dirty word here: NV Champagnes are blends of wines from the best growing seasons. But if you can find one, try a Champagne made by a Grower-Producer. These winemakers control every...
From Champagne to Chablis, it's hard (not to mention unpleasant) to avoid this famous white variety. During a huge popularity surge beginning in the late 1980s, Chardonnay plantings have increased dramatically -- not only in California's wine country, with which the variety is nearly synonymous, but also in Burgundy (its original, Old World home) and just about everywhere else in the winemaking...
