The Zucchi family makes incredible Lambrusco wines and this one is especially ambitious as the second fermentation is in bottle. This explains the slight residue from the spent yeast. This is a delectable dry red Lambrusco that emphasizes mineral, red fruits and some structure.

This beautiful, pale dusty rose Lambrusco has a refined, delicate structure that puts it a head above your typical bottle. A lovely vein of minerality runs through each sip, providing structure and playing beautifully off the red berry fruit and a subtle yeasty note. The Infondo is a throwback to times past--it's made in the way Lambrusco has historically been made before modern conveniences like electricity came into play. Specifically, the second fermentation takes place in the bottle with the addition of Sorbara grape juice, which results in a light sediment and a dream-like swirl of cloudiness in the glass. Drink this chilled to about 50 degrees, and enjoy with mild cheeses, light pastas, or pizza bianca. Saluti!
