Tasting Notes

You don't find many older vintage Georgian wines and this Saperavi is showing incredibly well today. Native to the Republic of Georgia, Saperavi makes a dark and earthy red wine. The wine is fermented and aged in the clay vessels called qvevri. Inky in color with woody tannins and juicy acidity, followed by black cherry, nutmeg, and tar.

Pheasant's Tears from Georgia is maybe one of the better-known producers in the States. They have both a cellar and a restaurant right in the vineyard. The cellar is so close, there is as little transport as possible, so that the grapes are nice and cool when they enter the Qvevri. Much like stainless steel vessels, the Qvevri keep the wine at a low temperature without imparting any wood flavor. With this 2008 Saperavi, you can still taste the fresh fruit, and the tannins are silky smooth.
