Tasting Notes

Winemaker Tedo Gzirishvili ferments and ages this wine in underground amphorae. This is made from the Saperavi grape variety which comes from Sagarejo in eastern Georgia. On the palate, this is dense with black fruits and delicious tannins. Aged in qvevri for 6 months.

Wines can be bountiful in flavors, and sometimes so much they are meal unto themselves. Here's one worth noting. Saperavi is Georgia's premier red varietal, and it's not a shy wine. It comes on with the intensity and longevity of an all night feast. This bottle from wine maker Tedo Gzirishvili and his family has firm tannins with an earthy element to them from 6 months spent aging underground in qvevri (clay pod-like vessels nestled in the earth for natural temperature control). That earthen quality is a signature trait of Georgian wines, but what's nice here is that it's not over powering. Notes of tart pomegranate and currant jam give way to a peppery dill on the finish. And yes that is Dionysus, the god of grape harvest and merriment, on the label. Full, wild, perhaps over the top?! Why not.
