Greece may be a relative newcomer on the world wine stage, but the country is a contender for one of the oldest sites of winemaking. This wine comes from the plains of Thessaly, which sits in the shadow of Mount Olympus, home to Dionysus the god of wine and the source of wine sent to the Trojans in Homer's Iliad. Papras Bio is a family-run winery that's been farming organically since 1990 and whose focus is on local varieties, such as Black Muscat of Tyrnavos. Their sparkling rose version is made in the ancestral style where fermentation starts in tank and finishes in the bottle, lending a more gently fizz. Delicate floral notes along with juicy raspberry, blood orange and a hint of sweetness make for a delicious summer afternoon sip. Great for the beach, picnic or BBQ.
