100% Listán Blanco (called Palomino in the region of Jerez) from old vines. The wine was fermented and aged for 7 months (on lees) in 500 liter French barrels. Minimal sulphur was added at bottling. The volcanic soils lends a fine mineral aspect to this refreshing white wine.

What a great white with a mineral, saline bite to it. Pointedly dry and very round on the palate. Listán Blanco isn't common outside of the Canary Islands. It's another name for Palomino Fino, one of the most common grapes used to make sherry. You'll definitely pick up the similarities this wine has with a Manzanilla or Fino. The nose has cactus fruit, kumquat, and pine. Hints of this stay on the palate, but it's dominated by this gorgeous salinity with dried lemons, nuts, and sea salt. It's a reminder that this wine is from the western Atlantic coast of Tenerife. Specifically from the Ycoden-Daute-Isora region. Interest in wine from the Canary Islands has been growing, but Borja Perez is still a small production. Saline and thirst quenching, this is the ultimate tapas wine.
