Vittorio Graziano began by tending a half hectare of his family's vines, befriending the village's old contadini who bestowed their work methods and advice. He ultimately sourced more land and replanted local varieties, all via massale selection. Today he tends to 5 hectares and makes sparkling red wine with passion.

One item from Emilia-Romagna that hasn’t yet broken through to ubiquity is Lambrusco, the slightly fizzy indigenous red wine that runs the gamut from sweet and desserty to dry, mineral and mouth-gripping.
