This cuvée was first made in 2008 and is made entirely from Chardonnay. The primary wine is kept in cask for a year before bottling. After the second bottle fermentation, the wine aged on the lees for nearly 10 years before disgorgement. The inaugural vintage couldn't be from a greater year and especially one that can age for decades.

Persauded by the great Anselme Selosse, Vouette et Sorbée's Bertrand Gautherot has ushered in biodynamically farmed sparklers in his corner of Aube. He works with 5 hectares located in the village of Buxières-sur-Arce in the Aube's Côte des Bar, just a ways northeast of Chablis. His parcels consist of Kimmeridgian marls capped by Portlandian limestone, encapsulating the mineral presence of its pristine Burgundian neighbor. This brut nature offering from Gautherot is full of tension, with acidity streaking across the palate and extreme freshness throughout. Although one might expect fruit-dominant character from a Champagne, this was so umami driven: tomato, pesto, clove, mint, and all the autolysis one could ask for. I paired this with a ramp gnocchi and a msubi platter among other things. This wine is almost a meal in itself.
