The red País grape defined Chilean winemaking for centuries after the Spanish transported the grape into the country during those devilish conquistador days. Today, you hardly see it but there has been a movement to revive what we could now deem native grape of the country. This is a Pét-Nat that is unsulphured, sparkling and full of character. The grapes are pressed directly and then fermented in steel tanks.

If there's a Louis Dressner Selections label on the back of a wine, it's got my attention. With a star studded portfolio, one of the few Chilean productions they import to the US comes by way of Louis-Antoine Luyt. Despite being a Burgundian, he grew sick of France and skipped his way over to Chile under the guise of picking up Spanish. Working his way up from dishwasher to vigneron after studying oenology in Beaune, Luyt remained in the Maule Valley after being enamored with Chile's wines, fightin for more terroir driven production. A rose sparkler made of Pais, the grape that Luyt chooses to highlight, using 80-year-old vines (Phylloxera never hit Chile so all original rootstocks here), this Pet Nat is full of notes of strawberry sour straws, dried roses, apricot, and crushed berries with its residual sugar giving the wine lift.
