The rare Chkhaveri grape was almost lost but it survives in Adjara. The Black Sea adjacent region of westernmost Georgia is home to Bibineishvili Wines, who work exclusively with the special variety. It is difficult to grow, and has low yields, so they source some grapes from nearby highlands. It spends one month on the skins, and has a medium structure, soaring acidity, and red berries, dried herbs, and a kiss of the sea. Pair with pork and cheese, both slathered with the region's famously spicy adjika.
